Tête de Moine
The fruity, full-bodied Tête De Moine dates back eight centuries, when it was first created by Swiss monks at the Abbey de Bellelay in the Jura Mountains. The name ete de Moine is French and means monks head. Its most unique feature is revealed when the cheese is gently trimmed away with the Girolle, which scrapes the top of the cheese into decorative rosettes.
