Sweet, fruity, kind of sour, with a custardy yet bouncy (almost gelatinous?) texture, Ovelha Amanteigado is made with raw sheep milk and thistle rennet by Queijos Tavares in Portugal. Ovelha Amanteigago (which loosly translates to buttery soft sheep) is the stuff custardy dreams are made of. Serve it with the rind off and a spoon when it's young or enjoy a pudgy bite as it ripens.
