Named after Coppinger Cove which sits at the base of the Cumberland Plateau and is the secluded hollow that the creamery calls home. 

Coppinger is a semi-soft washed rind cheese with a striking layer of decorative vegetable ash in its center.

Ever since people first began to combine food and fire, they’ve used ashes to preserve and purify things. Sometimes it’s called vegetable ash or activated charcoal. Some say it’s vegan fairy dust. This cheese works in the tradition of ash-lined styles like Morbier, but it comes from Coppinger Cove.

The velvety elastic paste is savory and buttery with notes of fresh grass, citrus, and cured meats, making it ideal for your next cheese and charcuterie board or melt it into any dish.Pair this delightful cheese with a fruity lighter bodied red such as Beaujolais Nouveau, malty ales and stouts, pickled vegetables, bacon jam, and charcuterie. Try it melted at your next raclette outing or as the ultimate grilled cheese.
